Biergarten Vibes, Hill Country Heart.

Witcher Brewing is a family-owned brewery and biergarten on the 290 Wine Trail just east of Fredericksburg. We built it to brew approachable beer and bring back a piece of the historic German biergarten culture that has been missing from our community. Our kitchen has something for everyone, and if you don’t want a beer, we also offer house seltzers, wine, and coffee.

The space includes communal beer-hall tables, a place to watch live sports, ample covered outdoor seating, and plenty of outdoor room for kids and adults alike. Kids and pets are part of the vision, not an afterthought. Whether you’re making a quick stop or settling in for the day, the goal is simple: beer that hits the spot, delicious food, and a space where everyone feels welcome.
