Witcher Brewing Co was built to be more than just a brewery — it’s a place to gather. Located on the 290 Wine Trail just east of Fredericksburg, we set out to create a modern Hill Country beer hall inspired by small-town German traditions. Long tables, open space, great beer, simple food, and a welcoming atmosphere for all generations are at the center of what we do.

As a family-owned brewery, we care deeply about craftsmanship and hospitality. We brew on a small-batch system with a focus on quality, precision, and consistency — approachable beers meant to be enjoyed together. Clean lagers and balanced ales, house seltzers, wine on tap, a full espresso bar, and a kitchen that holds its own.

Dan Witcher, who owns the place, is an Advanced Cicerone — the beer world’s version of a sommelier. Roughly 200 people worldwide have passed it. Day to day what that mostly means is that somebody here has strong opinions about draft lines and clean glassware, and will happily point you toward something you’ll actually like.
